Stromboli : Ham & Cheese

1 ct pizza dough preferably from your favorite pizzeria
0.5 lb deli ham the thinner the better
0.5 lb american cheese
0.25 lb salami thin slices
4 tbl spicy mustard to taste
1 ct egg for egg wash
0.25 c flour for dusting and working with dough

Preheat oven to 420º. Being that all of the ingredients are store bought, get everything out and open and prep your assembly line, give yourself plenty of space to work.

Flour your work surface and hands. Take the dough, place on the surface, and flip a few times to get a dusting to cover the dough. Initially, hold the dough in front of you and spin like a steering wheel, letting gravity help you spread the dough. Then lay on your work surface and roll into a rectangle, roughly the size of a half sheet pan.

With the dough on your work surface, start constructing. First, spread a thin layer of mustard, like sauce, over the dough leaving a 1" border. Next, a layer of ham to cover the mustard, slightly overlapping, then a layer of cheese. Finish with a spattering of salami. Don't cover with salami, just a few pieces here and there.

Beat an egg with a splash of water to create an egg wash and brush around the exposed edge of the dough. Then roll the dough, along the long edge, from the side closest to you. When you're just one roll from the edge, stop. For the last roll, pull the far side towards you to close the stromboli and make sure you get a good seal with the egg wash.

Place a piece of parchment paper on a half sheet pan. Place the dough on pan, seam side down, and put 3 - 4 small slits on the top to vent while it cooks. Paint the entire roll with the remaining egg wash and finish with a light sprinkle of large finishing salt (kosher or Maldon preferably). Bake for 15 minutes or so, until loaf is golden brown.
