1 c | fresh basil | packed |
1 tbl | kosher salt | |
0.5 tbl | black pepper | |
0.5 c | grated parmesan | freshly grated preferred |
Blend the tomatoes, garlic, basil, salt and pepper in a food processor until blended but still slightly chunky. The consistency is up to you.
Remove from food processor to a large bowl and mix in parmesan cheese. Taste and adjust seasonings as necessary.
Toss with favorite pasta (penne recommended) or top crostini with it and serve.

This is seriously one of my favorite recipes. It's so simple and versatile. Keep it in a mason jar for preserving for up to a month.
